Recipe of the week

Home made butternut squash soup

This winter warmer is perfect for these chilly evenings, separate into plastic tubs and freeze for convenient lunches

Serve with a warm crusty bread

1 butternut squash
1 White onion chopped
1/2 teaspoon cinnamon
1/2 teaspoon curry powder
1 1/2 pint vegetable stock

- chop up the onion and soften in a little olive oil
- when soft add spices
- add vegetable stock and chopped and deseeded butternut squash
- turn the heat down to medium and leave to boil for 20 mins or until squash has softened
- blend ingredients
